Smoked Herring Skewers with Potato Salad

Ingredients
- 600 g waxy potatoes
- Salt
- 125 g salad mayonnaise
- clear vegetable broth (instant)
- black pepper (ground)
- 2 bunches chives
- 2 tbsp silver onions (jarred)
- 4 smoked herring fillets
- 200 g salad cucumber
- 1 apple
- a splash of lemon juice
- 2 tbsp white wine vinegar
- Pinch of salt
- Pepper
- pinch of sugar
- 3 tbsp oil
- green bell peppers
- red bell peppers

Wash potatoes and boil with skins in salted water for 20 minutes. Drain, peel, and slice. Whisk salad mayonnaise with broth, a pinch of salt, and pepper. Mix with potato slices and let cool. Rinse chives, dry, and cut into rings; fold into the salad.

Drain silver onions. Rinse herring fillets and pat dry. Wash cucumber and peel if desired. Wash apple, quarter, core, and drizzle with lemon juice. Cut herring, cucumber, and apple into pieces and skewer them together with silver onions.

Whisk vinegar with a pinch of salt, pepper, sugar, and oil. Quarter bell peppers, clean, rinse, and finely dice. Toss peppers with the dressing and spoon over the skewers. Serve alongside the potato salad.
