Ingredients
- 0.5 cucumber
- 100 g diced pineapple (canned, unsweetened)
- 300 g smoked salmon
- 300 ml Vegetable broth
- 150 g crème fraîche
- Salt
- white pepper
- 200 ml heavy cream (30% fat)
- 1 tsp horseradish cream (to taste, from the jar)
- 2 sprigs dill

Peel the cucumber thoroughly, cut it lengthwise in half, scrape out the seeds and grate into fine slices. Drain the pineapple. Slice the salmon into thin strips and warm 2/3 of them with the vegetable broth, add about half of the cucumber slices, blend everything finely, stir in the crème fraîche and blend again briefly. Season with salt and pepper.

Stir the heavy cream and horseradish into the warm soup and serve immediately on plates, topping with salmon, pineapple and cucumber and garnishing with dill for a warm serving.
