Blueberry Noodle Soup

Ingredients

  • 300 g spiral noodles
  • Salz
  • 350 g blueberries
  • 500 ml vegetable broth
  • 200 g yogurt
  • chili powder
  • 1 EL lemon juice
  • finely chopped basil (for garnish)

Instructions

    Cook the noodles in salted water al dente. Rinse and drain well.

    Wash, dry, and drain the blueberries. Reserve some for garnish. Blend the rest with the broth and yogurt (leave 4 EL) until smooth. Season with chili, salt, and lemon juice.

    Distribute the noodles on bowls and pour the soup over them. Garnish with the remaining blueberries and leftover yogurt. Sprinkle with a little chili and serve garnished with basil.
