Ingredients

  • 1 small radicchio
  • 60 g watercress
  • 2 ripe pears
  • 2 tbsp lemon juice
  • 50 g roasted hazelnuts
  • 40 ml white wine vinegar
  • 1 tsp Mustard
  • 0.5 tsp Sugar
  • 3 tbsp vegetable broth
  • 4 tbsp oil
  • Salt
  • Pepper

    Wash the radicchio, shake dry and cut into small pieces. Wash the watercress and shake dry. Wash the pears, halve, core, slice into wedges, and drizzle with lemon juice.

    Mix the hazelnuts with white wine vinegar, mustard, sugar, vegetable broth, and oil. Season with salt and pepper. Then distribute over the salad, toss briefly, and serve.
