Smiling Vegetable Cream Soup

Ingredients
- 2 Spring Onions
- 350 g potatoes
- 150 g celery
- 1 Carrot
- 200 g Broccoli florets
- 2 tbsp butter
- 900 ml vegetable broth
- 150 ml Heavy Cream
- 4 slices toast bread
- 0.5 bunch Chives
- Salt
- Pepper (freshly ground)
- nutmeg (freshly grated)','2 roasted pumpkin seeds','2 peppercorns
Instructions

Wash, trim and slice spring onions into rings.

Peel, wash and dice potatoes, celery, and carrot.

Wash broccoli and pat dry.

Sauté all vegetables in 1 tbsp hot butter, then pour in broth. Cover and simmer for about 25 minutes, stirring occasionally.

Meanwhile whisk cream until creamy. Remove toast crusts and cut into four half-moons to serve as mouths. Dice the remaining bread small and fry everything in the remaining hot butter until golden brown. Drain on kitchen paper. Slice chives into ribbons.

Puree soup, stir in cream (leave 4 tbsp), add more broth if needed for desired consistency. Season with salt, pepper, and a pinch of nutmeg. Ladle into deep bowls. Top with croutons and chives as mouths and hair, two dollops of cream as eyes, pumpkin seeds on top, and peppercorns as nostrils. Serve immediately.
