A creamy vegetable soup featuring fresh lettuce and starchy potatoes from Spoonsparrow.
Ingredients
- 200 g starchy potatoes
- 1 Shallot
- 1 Garlic clove
- 1 tbsp Vegetable oil
- 600 ml Vegetable Broth
- 300 g lettuce
- 100 ml heavy cream
- 2 tbsp crème fraîche
- Salt
- a splash lemon juice
- Pepper (freshly ground)

Peel and dice the potatoes. Peel and finely chop the shallot and garlic. Sauté together in hot oil until translucent, add the potatoes and deglaze with broth; simmer gently for about 20 minutes.

Wash, dry, and cut the lettuce into strips. Add to the soup, bring to a boil, then blend until smooth. Stir in the heavy cream and let it reduce slightly or add more broth if needed. Mix in the crème fraiche and season with salt, lemon juice, and pepper.
