Smashed Potatoes with Cheese
Smashed Potatoes with Cheese from Spoonsparrow are very easy to prepare and perfect as a healthy after-work dish.
Ingredients
- 1 kg early potatoes (or small potatoes)
- Salt
- 2 Garlic cloves
- 6 tbsp Olive oil
- 1 dried red chili pepper
- Pepper
- 60 g Parmesan (32% fat in the product)
- 0.5 bunch flat parsley (10 g)

Wash potatoes and boil them in salted water for 20 minutes until soft. Drain, rinse with cold water and let drain. Meanwhile peel garlic and finely dice it. Put 5 tbsp oil into a small bowl and sprinkle the chili pepper over it.

Line a baking sheet with parchment paper and brush it with the remaining oil. Spread the early potatoes on the sheet and gently press them flat (small potatoes need to be peeled first).

Season the potatoes with salt, pepper, drizzle with the chili-garlic oil and sprinkle Parmesan over them. Bake the smashed potatoes in a preheated oven at 200 °C (convection 180 °C; gas: level 3) for about 25 minutes until golden brown.

Wash parsley, pat dry and finely chop the leaves. Take the smashed potatoes out of the oven, scatter parsley on top and serve with the remaining chili-garlic oil.
