Smart Butter Cookies

Ingredients

  • 400 g wheat flour type 1050
  • 10 g flour for handling
  • 1 tsp Baking powder
  • 70 g whole cane sugar
  • 1 tsp cinnamon
  • a pinch of salt
  • 190 g cold butter
  • 0.5 Vanilla pod
  • 2 Eggs

Instructions

    Sift the flour with baking powder onto a work surface. Mix the sugar, cinnamon and salt together and spread over the flour. Cut the butter into small pieces and distribute on top of the flour mixture. Split the vanilla pod lengthwise and scrape out the seeds with a knife.

    Add the vanilla seeds to the flour mixture and beat the eggs in the center. Quickly knead by hand into a smooth dough. If needed, add a little cold water. Wrap in a damp kitchen cloth and chill for 1 hour.

    Divide the dough on a lightly floured surface into two parts, knead again. Roll each part thinly and cut out anchor shapes with cutters; place them on baking sheets lined with parchment paper.

    Bake in a preheated oven at 180 °C (fan 160 °C; gas: level 3) for about 8–10 minutes until golden brown. Remove, lift the cookies from the sheet with the parchment, and let cool.
