Ingredients

  • 280 g flour
  • 100 g peeled, ground almonds
  • 75 g sugar
  • 225 g cold butter
  • 1 tsp lemon zest
  • 2 egg yolks
  • 20 g toasted almond slivers
  • sugar (for dusting)

Instructions

    Quickly knead the flour with the almonds, sugar, butter in crumbs and the lemon zest on a work surface into a smooth dough. If necessary, add a little cold water. Divide the dough into two portions and roll out on floured work surfaces into 3-4 cm diameter rolls. Wrap in plastic wrap and refrigerate for at least 2 hours.

    Preheat the oven to 160°C fan. Line one or more baking trays with parchment paper. Cut each roll into about 20 slices approximately 2 cm thick. From these, roll long, crooked "fingers" and gently flatten them. With a fork handle press light "folds" into the "knuckles." Beat the egg yolks with 2 tbsp water until smooth and brush the fingers with it. At each end of the finger place an almond leaf as a nail and press lightly. Place on the baking tray and bake in the oven for about 12 minutes until golden brown. Remove from the tray, dust warm with some sugar, and let cool.
