Ingredients

  • 300 g low‑fat quark
  • 1 tsp sugar
  • 600 g flour
  • 2 packets baking powder
  • 4 tbsp oil
  • 8 tbsp water
  • 12 tbsp milk
  • 1 tsp salt
  • 4 chicory heads
  • 2 red bell peppers
  • 2 carrots
  • 2 tbsp olive oil
  • 2 tsp thyme
  • Salt
  • freshly ground pepper
  • 300 g low‑fat quark
  • 2 eggs (medium)
  • 200 g Edam cheese

Instructions

    First, clean and slice the chicory into strips. Quarter the peppers, clean, rinse, and cut into strips. Peel and grate the carrots. Heat olive oil in a pan. Sauté the vegetables for 5 minutes, stir in thyme, season with salt and pepper, then remove from heat. Beat quark with eggs and fold into the vegetable mixture; taste again.

    Combine all dough ingredients in a bowl. Knead with a hand mixer’s beaters until smooth. Divide the dough into eight pieces. Shape each piece into a ball and roll out on a floured surface into round discs. Press the center slightly with your palm.

    Place four discs side by side on a baking sheet lined with parchment paper. Spread the vegetable‑quark mixture over the discs, grate Edam cheese on top, and sprinkle. Bake in a preheated oven at 200 °C (gas: level 3–4, fan: 180 °C) for about 20–25 minutes.
