Ingredients

  • 6 tomatoes
  • 2 red onions
  • 0.5 Red chili pepper
  • 2 tbsp olive oil
  • 1 tbsp Tomato Paste
  • 1 tsp Dried oregano
  • Salt
  • a pinch sugar
  • 2 Tomatoes
  • 1 Lettuce head
  • 16 shrimp (pre‑shucked and deveined)
  • 2 tbsp olive oil
  • Salt
  • pepper (ground)
  • 1 tsp lemon juice
  • 8 mini burger buns

Instructions

    For the sauce, blanch the tomatoes, cool, peel, quarter, deseed and dice. Peel the onions, halve and slice. Wash the chili, halve, clean and finely dice. Sauté onions and chili in hot oil for 1‑2 minutes. Stir in tomato paste and add tomatoes with oregano. Simmer gently for about 10 minutes until slightly thickened. Season with salt and sugar.

    For the burgers, wash and slice the tomatoes. Wash lettuce, dry and tear into bite‑sized pieces if desired. Rinse shrimp, pat dry and cook in a pan with hot oil for about 4 minutes until pink. Season with salt, pepper and lemon juice. Split buns, layer with lettuce, tomato slices, two shrimp and a spoonful of tomato relish. Place the bun tops and secure with wooden skewers.
