Autumn Mushroom Skillet with Spring Onions

A delicious autumn mushroom skillet with spring onions from Spoonsparrow is always wonderfully tasty.

Ingredients

  • 700 g mixed mushrooms (porcini, oyster, king trumpet, button)
  • 1 bunch spring onions
  • 2 Garlic cloves
  • 2 tbsp olive oil
  • 1 tbsp butter
  • 1 Tbsp freshly chopped thyme
  • Salt
  • ground pepper

Instructions

    Clean the mushrooms and slice or tear into small pieces. Wash, trim, and cut the spring onions into rings. Peel and finely chop the garlic.

    Heat a non-stick skillet with hot oil and brown the mushrooms in batches. Remove them from the pan, then sauté the spring onions and garlic in hot butter for 1-2 minutes, return the mushrooms, add thyme, cook for another 1-2 minutes, season with salt and pepper, and serve.
