Ingredients
- 1 green cardamom pod
- 2 tbsp coffee beans
- 1 tsp black peppercorns
- 1 tsp coarse sea salt
- 4 pork schnitzels (about 160 g each)
- 2 tbsp Vegetable oil
- 2 tbsp butter
- 100 g mixed salad leaves (oak leaf, purslane; arugula)
- 4 tbsp olive oil
- 4 tbsp white balsamic vinegar

Break open the cardamom pods and remove the seeds. Crush the coffee beans, peppercorns, and sea salt in a mortar.

Place the schnitzels on the work surface and flatten if necessary. Add oil and butter to a pan and heat with the spices. At medium heat, place the schnitzels into the hot coffee butter and fry for 2-3 minutes on each side.

Arrange washed, cleaned, and lightly trimmed salad on plates or bowls and drizzle with oil and vinegar. Serve with the schnitzels (drizzled with a bit of coffee butter).
