Pork Spinach Sage Roulades

Ingredients

  • 100 g spinach leaves
  • 4 pork cutlets
  • 4 slices Parma ham
  • 16 sage leaves
  • 1 tbsp mustard
  • 1 Shallot
  • 3 tbsp vermouth
  • Salt
  • Pepper
  • 50 ml white wine
  • 100 ml veal stock
  • 0.5 tsp tomato paste
  • starch (for thickening)
  • 1 Tbsp clarified butter

Instructions

    Clean the spinach, remove stems, wash and blanch in boiling salted water for a few seconds, then lay the leaves on a kitchen towel to dry.

    Flatten the cutlets, season with pepper and spread mustard on them. Place several spinach leaves on each cutlet, lay a slice of Parma ham over the leaves, and distribute 3-4 sage leaves on top. Roll the cutlets lengthwise into roulades and secure with toothpicks or kitchen twine. Season the roulades with salt and pepper.

    Peel and finely chop the shallot. Brown the roulades in hot clarified butter all around, remove them and keep warm. Add the shallots to the pan and brown them, add tomato paste and toast it, deglaze with vermouth, pour in wine and stock, scrape up the browned bits, and simmer for 3 minutes.

    Strain the sauce through a sieve, taste, and thicken with starch mixed in a little cold water if desired. Let the roulades sit in the sauce for 2 minutes, then cut each roulade into three pieces and serve on preheated plates.
