Small Lemon Cake

Ingredients

  • 1 untreated lemon
  • 180 g soft butter
  • 180 g sugar
  • 3 eggs
  • 180 g flour
  • 2 tsp Baking powder
  • powdered sugar (for dusting)

Instructions

    Preheat the oven to 180°C with top and bottom heat. Line the cake tin with parchment paper.

    Wash the lemon hot, dry it and finely grate the zest. Squeeze out the juice. Beat the butter with the sugar in a mixing bowl using an electric mixer until fluffy. Add the eggs one by one, stirring well after each addition. Fold in the lemon zest and juice. Sift the flour with the baking powder into the mixture and stir quickly to combine. Pour the batter into the springform tin, smooth the top, and place it on the second rack from the bottom of the oven. Bake for about 35 minutes (test with a skewer).

    Let cool, remove from the tin, dust with powdered sugar. Decorate as desired and serve.
