Small Gooseberry Cakes

Ingredients

  • 200 g gooseberries
  • 2 EL raisins
  • 1 EL rum
  • 5 eggs
  • 1 pinch salt
  • 120 g sugar
  • 50 g ground almonds (peeled)
  • 2 EL cornstarch
  • 100 g flour
  • 2 EL almond flakes

Instructions

    Preheat the oven to 180°C fan.

    Rinse the gooseberries, pat dry and strip them from the stems. Soak the raisins in rum. Separate the eggs; beat the whites with salt until stiff peaks form. Whisk the yolks with sugar until creamy. Mix almonds with cornstarch and flour, then fold into the yolk cream alternating with the beaten egg whites. Finally fold in almond flakes, gooseberries and raisins, and spoon the batter into molds only about halfway full. Bake for about 25 minutes (test with a toothpick).
