Ingredients
- 1 tbsp butter
- 300 g sour cherries
- 150 g Low-Fat Quark
- 1 small organic orange
- 2 Eggs
- a pinch of salt
- 50 g raw cane sugar
- 3 tbsp spelt flour Type 1050
- 1 tsp powdered sugar from raw cane sugar (for dusting)

Grease ramekins carefully. Wash, pit and distribute cherries in the ramekins.

Drain quark well. Rinse orange hot, pat dry and finely grate some zest.

Separate eggs. Beat egg whites with salt into stiff meringue. In a bowl mix yolks with 1/2 tsp orange zest and sugar until thick and creamy using hand mixer. Fold in quark. Sift flour over the mixture. Gently fold in meringue with a rubber spatula.

Spread the batter over the cherries in the ramekins and bake in preheated oven at 200 °C (fan 180 °C; gas: level 3) for 20 minutes. Dust with powdered sugar and serve immediately.
