Ingredients
- 90 g sugar
- 2 egg yolks
- 3 eggs
- 500 ml milk
- 0.5 Vanilla pod
- 100 g sugar
- 2 tbsp water
- 6 ramekins (160 ml each)
- oil (for greasing the ramekins)
- Lemon zest (for garnish)
Instructions

Whisk the sugar with the eggs and yolks thoroughly but do not beat into foam.

Bring milk to a boil with the split vanilla pod, then gradually pour it in a thin stream while stirring into the egg mixture.

Simmer sugar with water in a small pot until golden brown. Immediately pour into the lightly greased ramekins about 3 mm high.

Strain the egg‑milk mixture and fill the ramekins. Place them in a large baking dish filled with hot water to a height of 1–2 cm, bake at 180 °C for about 30 minutes until set. Cool the vanilla flan. To serve, loosen the edges with a sharp knife and pour onto plates.

Garnish as desired with lemon leaves or zest curls.
