Ingredients

  • 250 g long-grain rice
  • Sea salt
  • 1 clove garlic
  • 3 tbsp olive oil
  • 1 tbsp Lemon Juice
  • 800 g pork (belly or neck)
  • Pepper
  • 3 tomatoes
  • 1 cucumber
  • 1 Red Onion
  • 2 tbsp white wine vinegar
  • 2 tbsp freshly chopped parsley

Instructions

    Add the rice to a pot with about 500 ml boiling salted water. Cover and cook over low heat for about 20 minutes.

    Peel, finely grate the garlic with a pinch of salt. Mix with 1-2 tbsp oil and lemon juice. Rinse the pork, pat dry, cut into bite-sized cubes. Thread onto eight skewers. Brush with the garlic mixture, season with salt and pepper, and grill on a regular turn for 10-15 minutes until golden brown.

    Wash the tomatoes, trim off the stem ends, and slice finely. Wash the cucumber, trim ends, and slice. Peel and dice the onion finely. Combine tomatoes, cucumbers, onion, remaining oil, and vinegar; season with salt and pepper to taste.

    Arrange the salad on plates, sprinkle with parsley, add rice, place skewers on top, and serve.
