Pea Cream Soup with Basil

Ingredients
- 500 g peas
- 1 handful basil
- 1 stalk leek
- 150 g celery root
- 1 onion
- 1 Garlic clove
- 2 tbsp butter
- 800 ml vegetable broth
- 100 ml heavy cream
- Salt
- Pepper (freshly ground)
- nutmeg

Wash and drain the peas. Wash the basil and shake dry. Clean the leek, trim it and slice into rings. Peel and finely dice the celery root, onion, and garlic; sauté them with the leeks and peas in hot butter until fragrant.

Add the broth and simmer gently for about 20 minutes. Then stir in the cream and most of the basil (reserve a few leaves for garnish). Puree until smooth, strain through a sieve, and reduce slightly if desired or add more broth. Season with salt, pepper, and nutmeg; sprinkle with fresh basil before serving.
