Simple Vegetable Quiche

A delicious spring dish for the whole family featuring a light and flavorful vegetable quiche from Spoonsparrow.

Ingredients

  • 150 g flour
  • 50 g cold butter
  • 1 egg
  • Salt

  • 180 g leeks
  • 1 Garlic clove
  • a handful fresh parsley
  • 125 ml milk
  • 125 ml whipping cream
  • 3 eggs
  • 160 g grated cheese (e.g., Gouda and goat hard cheese mixed)

  • pepper (ground)
  • Nutmeg (freshly grated)
  • fresh watercress

    Knead the flour with the finely chopped butter, egg, and a good pinch of salt into a smooth dough. Shape it into a ball, wrap in cling film, and let rest for about 30 minutes.

    Preheat the oven to 200°C (400°F) fan‑fry. Grease the pan and dust it with flour. Peel and dice the carrots. Trim, halve, rinse, and finely slice the leeks. Mince the garlic. Wash, dry, and chop the parsley. Whisk together milk, cream, and eggs; stir in cheese and season well with salt, pepper, and nutmeg. Combine all vegetables and parsley with the egg mixture in a bowl. Roll out the dough on a floured surface slightly larger than the pan. Line the pan with the dough and spread the vegetable‑egg filling over it. Bake in the preheated oven for about 45–50 minutes until golden brown. If the quiche browns too quickly, cover with foil. Slice and serve, optionally garnished with watercress.
