Pea Curry with Cilantro

Ingredients

  • 250 g new potatoes
  • 1 kg peas in pods (or 300 g frozen peas)
  • 2 carrots
  • juice of one lemon
  • 2 tbsp oil
  • 1 red chili pepper
  • 2 tbsp Curry Powder
  • iodized salt
  • Pepper
  • 300 ml vegetable broth (instant)
  • 2 zucchini (with florets)
  • 2 tsp starch
  • Some fresh cilantro (and lemon for garnish)

Instructions

    Peel, wash and finely dice the potatoes. Separate peas from the pods. Peel carrots and slice into rounds.

    Heat oil in a pan. Sauté prepared vegetables (frozen peas) and chili pepper. Season with curry powder, salt, and pepper. Add broth and cover to simmer for about 20 minutes.

    Rinse zucchini, cut off florets, and slice the zucchini. Mix zucchini slices into the curry and steam for 5 minutes. Dissolve starch in a little cold water. Stir into the broth and bring to a boil once. Cut florets again and stir them into the vegetables. Taste again and serve garnished with cilantro and lemon.
