Simple Vanilla Crescents

Ingredients

  • 0.5 tsp vanilla powder
  • 100 g raw cane sugar
  • 250 g spelt flour Type 1050
  • 100 g Ground Almonds
  • 1 egg yolk
  • 200 g butter
  • 2 tbsp powdered sugar from raw cane sugar

Instructions

    Mix vanilla powder and sugar in a bowl. Quickly knead 70 g vanilla sugar with flour, ground almonds, softened butter, and egg yolk into a smooth dough. Shape the dough into a ball, wrap it in foil, and chill for at least 30 minutes.

    Line a baking sheet with parchment paper. Roll the dough into ropes (about 3 cm diameter), cut them into 2 cm pieces, shape each into a half‑moon, and place on the baking sheet. Bake in a preheated oven at 175 °C (160 °C fan; gas: level 2–3) on the middle rack for about 10 minutes until golden.

    Mix the remaining vanilla sugar with powdered sugar in a shallow dish. Carefully lift the finished cookies from the parchment and roll them in the sugar mixture.
