Simple Strawberry Roll

A Simple Strawberry Roll from Spoonsparrow: Only a few ingredients and a handful of steps are needed for this delicious summer cake!

Ingredients

  • 120 g flour
  • 1 tsp Baking powder
  • a pinch of salt
  • 4 eggs
  • 200 g sugar
  • 200 g strawberries
  • 4 tbsp Lemon juice
  • 0.5 tsp vanilla powder
  • 300 g whipping cream
  • 2 packets gelatin powder
  • 2 tbsp powdered sugar

Instructions

    Combine flour, baking powder and a pinch of salt. Separate the eggs. Beat egg whites with 4 tbsp cold water until stiff peaks form while gradually adding 150 g sugar. Fold in yolks. Sift the dry mixture over the wet and fold gently.

    Line a baking sheet with parchment paper, spread the batter evenly and smooth with a spatula. Bake on the middle rack of a preheated oven at 180 °C (fan: 160 °C, gas: level 2–3) for 12–15 minutes.

    Sprinkle a large kitchen towel with 2 tbsp sugar, carefully transfer the sponge onto it, brush the parchment with cold water and gently lift the sheet off the batter. Roll the sponge immediately on the towel and let it cool.

    For the filling, clean, wash and chop strawberries; mix with remaining sugar, lemon juice and vanilla powder. Whip cream with gelatin until stiff; fold in strawberries. Spread the strawberry cream over the cooled sponge and roll again using the kitchen towel. Chill the Simple Strawberry Roll for at least 3 hours.

    Dust with powdered sugar, slice into rounds and serve immediately.
