Simple Roast Duck
A classic roast duck that always turns out well. Try this recipe from Spoonsparrow.
Ingredients
- 1 whole duck (2 kg, prepped)
- Salt
- black pepper (freshly ground)
- 4 small apples
- 40 g Butter
- 0.25 tsp cinnamon
- 1 Vanilla bean

Wash the duck and pat it dry. Rub salt and pepper on both inside and outside of the bird.

Peel, quarter, and core the apples. Heat 20 g butter in a sauté pan, add the apples, and brown them on all sides; sprinkle with cinnamon and season lightly with salt and pepper. Place the apples inside the duck and secure with wooden skewers.

Slice the vanilla bean lengthwise, scrape out the seeds, and mix them with the remaining butter. Spread this mixture over the duck using a spatula.

Place the duck breast-side down in a roasting pan, pour about 150 ml water into the pan, and roast at 160°C for about 30 minutes. Flip the duck and increase the temperature to 250°C, roasting for another 30 minutes; baste the duck several times with the pan juices.

Remove the simple roast duck from the pan, take out the stuffing, and arrange the duck on a plate with the apples as garnish.
