Simple Mushroom Soup

Quick and easy to prepare is the simple mushroom soup from Spoonsparrow.
Ingredients
- 300 g fresh chanterelles
- 200 g fresh forest mushrooms (porcini, chestnuts, red caps, etc.)
- 1 Shallot
- 3 tbsp butter
- Salt
- pepper (ground)
- 100 ml dry white wine
- 500 ml vegetable broth
- 4 tbsp crème fraîche
- 100 ml whipping cream
- nutmeg
- 1 tbsp chives rolls
- 4 chives

Clean the chanterelles and forest mushrooms, cutting them smaller if needed. Peel the shallot, halve it and dice finely. Heat butter in a pot, quickly sauté the mushrooms, add the diced shallots and sauté briefly more, seasoning with salt and pepper. Remove about one-third of the mushrooms and set aside. Deglaze the rest with white wine, let reduce slightly, then add vegetable broth and simmer gently for about 15 minutes. Add crème fraîche and cream, blend everything finely, season with salt, pepper and nutmeg. Return the reserved mushrooms to the soup and warm through.
