Chanterelle Patties

The chanterelle patties from Spoonsparrow are a must-try during mushroom season!
Ingredients
- 800 g chanterelles
- 2 onions
- 2 Eggs
- 100 g spelt whole‑grain flour
- 100 g whole‑grain breadcrumbs
- Salt
- Pepper
- 30 g butter (2 tbsp)
- 10 g parsley (0.5 bunch)
Instructions

Clean the chanterelles and finely chop two‑thirds of them. Peel and dice the onions. Mix the onions, eggs, chopped mushrooms, flour, and breadcrumbs into a well‑mouldable dough. Season with salt and pepper and shape into 12 patties.

Melt one tablespoon of butter in a pan and fry the patties over medium heat for about 8–10 minutes until golden brown on all sides.

Meanwhile wash, dry, and chop the parsley. Melt the remaining butter in another pan and cook the leftover chanterelles over medium heat until tender. Season with salt and pepper, fold in the parsley. Arrange the patties on four plates and top with the sautéed mushrooms.
