Simple Covered Apple Cake

Ingredients

  • 300 g spelt flour type 1050
  • 2 tsp Baking powder
  • 130 g whole grain sugar
  • 0.5 tsp vanilla powder
  • 1 pinch salt
  • 175 g cold butter
  • 1 egg
  • 1 kg apples
  • 1 tsp cinnamon powder
  • 1 tbsp Raisins
  • 1 egg yolk

Instructions

    Mix flour with baking powder, 100 g whole grain sugar, vanilla powder and salt in a bowl. Beat the butter into the dough with a pastry cutter. Fold in the egg and knead everything quickly into a smooth dough. Cover and chill for 10 minutes.

    Line a springform pan with parchment paper. Roll out half of the dough, place it in the pan, lift the edges, prickle the bottom with a fork several times, and bake in a preheated oven at 180 °C (fan: 160 °C; gas: level 2–3) for 10–15 minutes until lightly golden.

    For the filling peel, quarter, core and dice the apples. Combine them with the remaining sugar, cinnamon, raisins and 2 tbsp water in a pot and gently steam until soft. Meanwhile roll out the remaining dough into a sheet.

    Spread the filling over the base, lay the dough cover on top, press the edges firmly against the bottom. Brush the dough with egg yolk and bake for about 25 minutes until golden brown.
