Pudding Brownies

Chocolate batter meets creamy pudding in these Pudding Brownies from Spoonsparrow.

Ingredients

  • 1 packet vanilla pudding powder (37 g; for 500 ml liquid)
  • 400 ml milk (3.5% fat)
  • 250 tbsp whole cane sugar
  • 250 g dark chocolate (min. 70% cocoa content)
  • 180 g butter
  • 3 eggs
  • 150 g Spelt flour Type 1050
  • 1 tsp Baking powder
  • 100 g Ground Almonds

Instructions

    For the pudding, whisk pudding powder with 4 tbsp milk until smooth. In a pot, bring the remaining milk and 50 g sugar to a boil, then slowly add the pudding milk while stirring. Simmer for 2–3 minutes, stirring continuously. Transfer to a bowl and let cool.

    Coarsely chop the chocolate, melt it over a bain-marie, and allow it to cool. Beat butter with sugar until creamy, then gradually fold in eggs. Mix flour with baking powder and almonds, add to the mixture, and stir in. Finally, fold in the cooled chocolate.

    Pour half of the batter into a rectangular pan, smooth the surface, and spoon pudding onto it. Cover with the remaining batter and pierce several times with a fork. Bake in a preheated oven at 200 °C (180 °C fan; gas: level 3) for about 30 minutes.

    Let the Pudding Brownies cool, cut into pieces, and serve.
