Ingredients

  • 8 not too large pouch crabs
  • 1 piece ginger (8 cm)
  • 4 Garlic cloves
  • light soy sauce
  • sesame oil
  • 2 chili peppers
  • 3 stalks lemongrass
  • 2 large onions
  • fish sauce

Instructions

    Pour about 4 L of water into a large pot. Peel and dice the ginger. Peel and cube the garlic. Mince the chilies. Peel and cube the onions. Wash the lemongrass and cut into 2 cm pieces.

    Add the ginger, garlic, chili, onions, lemongrass, 100 ml soy sauce and 50 ml fish sauce to the water and bring to a boil. Simmer for about 5 minutes, then reduce heat and add the pouch crabs to the simmering liquid and cook for about 15-20 minutes. Remove from the pot and gently crack open with a small hammer or crab tongs to release the meat. Serve the crab meat drizzled with the broth.
