Mussels in Marinade

Ingredients
- 3.5 kg mussels
- 3 tbsp olive oil
- 4 onions
- 1 bunch chives
- 2 tbsp butter
- 350 ml dry white wine
- 200 ml fish stock
- Salt
- Pepper
- Lemon juice

Sort the mussels, discarding any that are open. Brush the mussels under running water and remove their beards.

Peel the onions and slice them into strips. Wash and shake off excess moisture from the chives. In a large pot, sauté the onions in olive oil. Add the fish stock, 150 ml of water, and the wine. Season with salt and pepper and bring to a boil. Add the mussels to the pot and cook covered over high heat for about 8 minutes, shaking vigorously occasionally. Remove any mussels that do not open. Slice half of the chives into ribbons and stir them in. Finish the dish with lemon juice and serve garnished with chives.
