Shrimp Ravioli with Tomato Sauce

- 400 ml passierte Tomaten
- 2 Lorbeerblätter
- 1 EL Zucker
- 2 TL Weißweinessig
- Salz
- 2 Prisen Cayennepfeffer
- 20 Garnelen (mit Schale, ohne Kopf)
- 600 g frische Ravioli (mit Fleischfüllung)
- 4 EL Dijonsenf
- 1 EL gehacktes Koriandergrün
- 4 EL Olivenöl
- Pfeffer (aus der Mühle)
- 50 ml trockener Weißwein
- Koriandergrün (zum Garnieren)

Bring the passierte Tomaten to a boil in a pot with bay leaves, sugar and vinegar. Season with salt and cayenne pepper, simmer for about 5 minutes. Wash the shrimp and pat dry with paper towels. Cook the ravioli according to package instructions in boiling salted water. Mix mustard and coriander together.

Heat olive oil in a pan and brown the shrimp on both sides for 1-2 minutes. Salt, pepper and deglaze with white wine. Remove from heat and stir in the coriander mustard.

Arrange the tomato sauce as a base on plates, spread the ravioli over it, and place the shrimp on top of the ravioli. Garnish with coriander leaves.
