Ingredients
- 1 Red Snapper (about 800 g, ready to cook)
- juice of one lime
- Salt
- Pepper (freshly ground)
- 1 chili pepper
- 2 Tomatoes
- 1 Shallot
- 0.5 bunch fresh cilantro
- Paprika peppers (one small red and one small green each)
- 2 tbsp green olives
- 4 tbsp oil
- cilantro leaves (for garnish)

Instructions

Wash the fish and pat dry, then season with salt, pepper, and lime juice.

Wash the chili pepper, slit it lengthwise, remove seeds, and finely chop. Blanch tomatoes for a few seconds, shock in ice water, peel, quarter, seed, and dice into small cubes.

Peel and finely dice the shallot. Wash cilantro, shake dry, and chop leaves. Wash paprika, deseed, remove white membranes, and cut into small large cubes. Slice olives into rounds.
