Ingredients
- 8 hard-boiled eggs
- 1 baby pineapple
- 200 g pre-cooked shrimp (ready to eat)
- 2 tbsp capers
- 1 cup yogurt
- 150 g mayonnaise (from jar)
- juice of one lemon
- 1 tbsp curry powder
- salt (pepper)
- Tabasco
- red beet leaf for garnish

Peel the pineapple thoroughly, quarter it and cut off the hard core. Peel and quarter the eggs. Slice the pineapple into thin sticks and combine with the shrimp and capers in a bowl with the eggs.

Whisk together yogurt, mayonnaise and lemon juice. Season with salt, pepper and Tabasco, then mix with the remaining ingredients and garnish with red beet leaves.
