Shrimp Nigiri

- 225 g pre-cooked sushi rice
- vinegar water (for shaping)
- 12 cooked scampi
- 1 tsp wasabi

Divide the sushi rice into 12 portions and shape each portion into a small mound or elongated ball using hands dampened with vinegar water. Peel the scampi, leaving the tail segment attached to the shrimp. Make a longitudinal cut along the shrimp without cutting all the way through (a butterfly cut), then open the shrimp flesh so it lies flat and wide. Spread wasabi on the shrimp as described for other nigiri and place it on top of a rice mound.

Spread a little wasabi on the underside of each scampi and hold it in your hand. Place the rice ball onto the wasabi-coated side of the scampi, positioning the tail segment to protrude slightly. Press gently while using the tip of the left thumb against the rice mound from above to maintain its shape. Flip the nigiri sushi over and reshape with two fingers if needed. Arrange the nigiri sushi with the rice side facing down.
