Ingredients

  • 150 g ready-made sushi rice
  • Essigwasser (for shaping)
  • 150 g fresh octopus (e.g., tentacles, kitchen-ready)
  • 1 tbsp lime juice
  • 1 tsp wasabi
  • 0.5 roasted nori sheet

Instructions

    Divide the sushi rice into 8 portions and shape each portion into a small mound or elongated ball using hands dampened with vinegar water.

    Slice the octopus meat into 8 as flat slices as possible and drizzle with lime juice. Let sit for 5 minutes, then pat dry. Spread a thin layer of wasabi on one side of each slice and place it in your hand.

    Place one rice ball on top of the wasabi-coated side of the octopus slice, press lightly while using the tip of the left thumb to keep the shape. Flip the nigiri over and reshape with two fingers if needed. Repeat for the remaining octopus slices.
