Ingredients
- 3 kg mussels
- Salt
- fat (for greasing the ramekins)
- 5 eggs
- 350 ml heavy cream (at least 30% fat content)
- 200 g ricotta
- 100 g freshly grated Parmesan
- 1 tin saffron strands
- black pepper (ground)
- dill sprigs (for garnish)

Preheat the oven to 200°C (400°F) with upper and lower heat. Wash mussels thoroughly. Bring a pot of 2-3 cm salted water to a boil. Cook mussels covered for about 5 minutes until all shells open; discard closed ones. Remove meat from shells and distribute into four oven-safe, greased ramekins.

Whisk eggs with cream, ricotta, Parmesan, and saffron; season with salt and pepper. Pour the mixture over the mussel meat and bake in the preheated oven for 20-25 minutes. Remove and serve garnished with dill.
