Ingredients

  • 2 kg green mussels
  • 1 Shallot
  • 2 Garlic cloves
  • 2 tbsp olive oil
  • 400 g passata tomatoes
  • 100 ml fish stock
  • 100 ml red wine
  • 4 thyme sprigs
  • 1 tsp fresh chopped rosemary
  • Sea salt
  • Cayenne pepper
  • basil (for garnish)

Instructions

    Wash the mussels carefully under running water. Remove the beards and check each mussel to ensure it is closed; discard any that are open.

    Peel and finely chop the shallot and garlic. Sauté the onion and garlic cubes in hot oil until translucent. Add the tomatoes, stock, and wine, stirring and simmering for about 5 minutes.

    Add the mussels, thyme sprigs, and chopped rosemary to the pot. Cover and cook for approximately 8 minutes, or until all mussels have opened. Season with sea salt and cayenne pepper, remove the thyme sprigs, and serve garnished with basil.
