Ingredients

  • 2 handfuls young spinach leaves
  • 2 red bell pepper halves
  • 1 clove garlic
  • 4 tbsp olive oil
  • Salt
  • Pepper (freshly ground)
  • 1 Shallot
  • 2 tbsp white balsamic vinegar
  • 2 balls mozzarella (about 250 g)
  • 4 sesame rolls
  • 2 tsp Honey

Instructions

    Wash, trim and dry the spinach. Wash the bell pepper halves, halve them again, peel and cut into strips. Peel the garlic, finely chop it and fry with the pepper in 2 tbsp hot oil for 2-3 minutes. Season with salt and pepper and set aside.

    Peel the shallot, dice finely and mix with the remaining oil and balsamic vinegar. Season with salt and pepper and fold the spinach into the dressing.

    Slice the mozzarella and place half of it on the halved rolls. Drizzle honey on the bottom side and arrange the spinach with bell pepper strips on top. Add the remaining mozzarella, put the roll tops back on and serve.
