Sesame Pork with Soy Sauce and Pak Choy

Ingredients
- 600 g neck pork steak (4 slices)
- 4 small pak choi (Asian store), or chard
- 4 large carrots
- 1 tbsp salt
- 30 g sugar
- 1 tsp light bean paste
- 1 tsp Chinese rice wine
- 1 tsp dark soy sauce
- 1 tbsp light soy sauce
- 4 tbsp acacia honey
- 2 tsp dark rice vinegar
- 1 tsp rice wine
- 1 tsp Cornstarch
- 2 tbsp sesame seeds
- neutral oil

Whisk salt, sugar, bean paste, alcohol and the two soy sauces together. Add the pork, mix well and marinate for 45 minutes.

Wash, trim and halve the pak choi. Blanch in plenty of boiling salted water for about 5 minutes. Remove and drain. Peel carrots, cut lengthwise into quarters and blanch in boiling salted water for another 5 minutes. Drain.

Meanwhile dissolve honey in a bowl with 2 tbsp hot water, let cool for about 5 minutes. Stir in rice vinegar, rice wine and cornstarch until smooth.

Brush the oven grill rack with oil. Place pork on it and grill under the broiler (place a pan beneath to catch fat) for about 2 minutes per side. Remove, halve each piece, place on a clean baking sheet and spread sauce thickly over the surface. Return to the oven for another 4-5 minutes under the broiler (at the bottom of the oven). Sprinkle sesame seeds over the pork and serve on plates with the blanched vegetables.
