Sesame Fish Sticks – Smart
The sesame fish sticks with spicy cucumber salad from Spoonsparrow are always a hit with both children and adults!
Ingredients
- 1 cucumber
- Salt
- 1 Red Onion
- 1 tbsp White Wine Vinegar
- 1 tsp liquid honey
- Pepper
- 4 tbsp rapeseed oil
- 4 sprigs dill
- 300 g Atlantic cod fillet
- 3 tbsp spelt whole‑grain flour
- 4 tbsp whole‑grain breadcrumbs
- 1 tbsp Sesame seeds
- 1 egg
Instructions

Peel the cucumber and grate it into very thin slices. Lightly salt and drain in a sieve for 15 minutes.

Peel and finely dice the onion. In a bowl whisk together vinegar, honey, salt, pepper and half of the oil.

Add the drained cucumber to the mixture. Wash, pat dry, finely chop the dill and fold it in.

Rinse the fish, pat dry and cut into 2 cm wide strips. Season with salt and pepper. Place flour on a plate and dredge the fish strips in it.

Mix breadcrumbs with sesame seeds on another plate.

Beat the egg in a separate bowl and season with salt.

Dip each fish piece first in the beaten egg, then coat firmly with the breadcrumb mixture, pressing the crumbs onto the surface.

Heat the remaining oil in a non‑stick pan over medium heat and fry the fish sticks until golden brown all around.

Drain on kitchen paper and serve with the cucumber salad.
