Oven‑Baked Fish
Oven‑baked fish with apple vinaigrette! The advantage of this baked fish is that it cooks in the oven and is served with a light vinaigrette.
Ingredients
- 150 g green apples (1 green apple)
- 1 Shallot
- 1.5 tbsp malt vinegar
- Salt
- Pepper
- 3 tbsp Rapeseed oil
- 3 sprigs dill
- 4 tbsp whole‑grain breadcrumbs
- 2 tsp grated Parmesan
- 1 egg
- 320 g Atlantic cod fillet (2 fillets)
- 2 tbsp spelt whole‑grain flour
Instructions

Wash, core, and finely dice the apples. Peel and finely dice the shallot.

Combine both in a bowl with malt vinegar, salt, and pepper. Add rapeseed oil and whisk into a vinaigrette.

Wash the dill, shake dry, pluck off the small leaves, finely chop, and mix into the apple vinaigrette.

Mix breadcrumbs and Parmesan. Whisk the egg. Rinse the fish, pat dry, season with salt and pepper, and dredge in flour.

Dip each fish piece in the whisked egg, then coat in the breadcrumb mixture. Press crumbs firmly onto the fish.

Lightly oil a baking sheet if needed. Place the fish on it and bake in a preheated oven at 250 °C (fan‑less or gas high setting) for 12–15 minutes until crisp. Serve with the vinaigrette and a green salad.
