Semolina Dumplings

The semolina dumplings from Spoonsparrow are wonderfully fluffy and ready in 30 minutes – the perfect side for your favorite soup. Just give it a try!
Ingredients
- 250 ml milk (1.5% fat)
- 50 g soft wheat semolina
- 1 egg
- 1 tbsp Rapeseed Oil
- 1 pinch salt
- 0.5 bunch parsley (10 g each)
- 500 ml vegetable broth
- 40 g Parmesan

Heat the milk in a pot, stirring occasionally. Gradually add the semolina and keep stirring until it boils. Then let it simmer on low heat for about 2 minutes until a thick porridge forms.

Remove from the stove and let it cool slightly. Stir in the egg, then add oil and salt. Wash the parsley, shake dry and pluck the leaves. Set aside half, finely chop the other half. Add the chopped parsley to the mixture and allow it to cool completely.
