Pan-Seared Salmon Fillets in Orange Wasabi Sauce

Ingredients
- 1 bunch thin spring onions
- 2 Garlic cloves
- 2 tbsp finely chopped coriander leaves
- 700 g salmon fillet (skinless)
- 3 tbsp oil
- Salt
- ground pepper
- 4 tbsp Sour cream
- 6 tbsp orange juice
- 2 tbsp Lime juice
- 1 tsp wasabi
- lime and orange slices
- coriander leaves
Instructions

Wash, trim, and slice spring onions into thin rings.

Peel and finely chop garlic.

Cut salmon into 8 strips.

Heat oil in a wide pan over medium heat and sear salmon strips for about 4 minutes each side, seasoning with salt and pepper.

Whisk sour cream with 1 tbsp orange juice to desired consistency, season with salt and pepper.

Add garlic and onions to fish and sauté for about 1 minute, then pour lime juice, remaining orange juice, and ½ cup water; bring to a boil.

Stir in wasabi until dissolved. Add coriander, season with salt and pepper. Plate salmon on bowls with lime and orange slices, top each with a dollop of sour cream, and garnish with coriander leaves.
