Ingredients

  • 0.5 honeydew melon
  • 1 small onion
  • 1 red chili pepper
  • 2 stalks coriander
  • Salt
  • black pepper (freshly ground)
  • 1 tbsp Lemon Juice
  • 8 sea scallop fillets
  • 8 large wild garlic leaves
  • Salt
  • white pepper
  • 1 tbsp lime juice
  • 4 tsp chopped peanuts
  • 2 tbsp butter

Instructions

    For the melon salsa, halve the honeydew melon, remove seeds, peel and dice the flesh into small cubes. Peel and finely chop the onion. Wash, deseed and finely dice the chili pepper. Rinse coriander, pluck leaves from stalks and finely chop. Combine melon, chili, onion and coriander, then season with lemon juice, salt and pepper.

    For the skewers, pat scallop fillets dry, season with salt and pepper. Thread one wild garlic leaf onto each skewer. Heat butter in a pan, toast peanuts until fragrant, then remove. Sear scallops 1–2 minutes per side, drizzle with lime juice. Plate on warmed dishes, sprinkle with toasted peanuts before serving.
