Sea Bass Fillet with Lemon Sauce

Ingredients

  • 1 small red chili pepper
  • 2 Organic lemons
  • 650 g sea bass fillet
  • 200 ml fish stock (glass)
  • 3 tbsp olive oil
  • 2 pinch turmeric
  • Sea salt
  • 4 sprigs cilantro

Instructions

    Wash the chili pepper, halve it, remove seeds and slice into thin strips. Rinse the lemons under hot water. Slice one lemon into thin rounds; grate half of the zest from the other lemon and squeeze out its juice.

    Rinse the fish fillet under cold water, pat dry, cut into four equal pieces, drizzle with a little lemon juice and let rest for 2 minutes. Mix the fish stock with chili strips, lemon zest, remaining lemon juice and olive oil.

    Bring the mixture to a boil in a pan, stir in turmeric. Season with salt and simmer over low heat for 5 minutes. Place the fillets in the sauce, cover and let them steam for 3–4 minutes on low heat.

    Meanwhile wash and shake dry the cilantro. Plate the fish with sauce, lemon slices and cilantro on four plates.
