Ingredients

  • 200 g milk chocolate couverture
  • 400 g whipping cream
  • 50 g vanilla sugar
  • 1 tbsp rum
  • 1 passion fruit
  • 2 tbsp sugar
  • mint
  • powdered sugar
  • chocolate shavings

Instructions

    Chop the couverture into small pieces and melt slowly in a double boiler.

    Whip the cream with vanilla sugar until stiff peaks form.

  3. 3.

    Add a little cream to the chocolate and stir.

  4. 4.

    Fold in the remaining cream and rum into the chocolate.

  5. 5.

    Pour into dessert glasses and chill for 1 hour.

    Slice the passion fruit.

    Lightly caramelize sugar and 1 tbsp water in a pan, then turn the passion fruit slices in it.

    Garnish the mousse with the passion fruit slices, mint flakes, powdered sugar, and chocolate shavings.
