Ingredients

  • 800 g potatoes
  • 1 Schellfisch (1 kg, headless, ready to cook)
  • Salt
  • Pepper
  • 125 g butter
  • 250 ml white wine
  • 4 bay leaves
  • 6 lemon slices (unprocessed)
  • 1 bunch spring onions
  • 300 g cherry tomatoes
  • 1 bunch curly parsley

Instructions

    Peel, wash and slice the potatoes. Rinse the fish, pat dry and season inside and out with salt and pepper.

    Bring butter and wine to a boil and season strongly with salt and pepper. Add potatoes to the sauce pan. Place the fish on top and cover with bay leaves and lemon slices. Drizzle everything with the wine-butter sauce. Bake in a preheated oven at 200°C (gas: level 3-4, convection: 180°C) for about 35 minutes.

    Clean spring onions and cut into 2 cm pieces. Rinse cherry tomatoes, score crosswise and season with salt and pepper. After 25 minutes add the spring onions and tomatoes to the sauce pan. Wash parsley, shake dry and roughly chop. Sprinkle over the fish before serving.
