Ingredients
- 1 bulb fennel
- 1 Carrot
- 1 Red Onion
- 1 tbsp oil
- 1 splash white wine
- 500 g sea bass
- 250 g venus clams (fresh or frozen)
- 1 tin saffron powder
- 200 g whipping cream (1 cup)
- Salt
- ground pepper
- chervil (for garnish)

Peel and finely chop fennel and carrot. Peel onion and slice into rings. Heat oil in a pot. Briefly sauté onion, fennel, and carrot. Deglaze with white wine.

Cube the sea bass. Rinse clams thoroughly. Place fish and clams over the vegetables and cover; simmer for 6-8 minutes until cooked.
