Scallops on Leek Vegetables

Ingredients
- 2 EL Butter
- 375 g leek (washed, cleaned and finely chopped)
- 125 ml heavy cream
- 3 EL mint (finely chopped)
- 2 EL olive oil
- 500 g fresh scallops (6 fresh scallops)
- Salt
- pepper (from the mill)
- pink peppercorns

Melt butter over low heat. Add leeks and sauté over medium heat for about 5 minutes, stirring frequently. Pour in cream and bring to a boil, then reduce by 1-2 minutes. Stir in chopped mint.

Heat olive oil in a skillet or grill pan. Add scallops to the hot oil and cook each side for about 1-2 minutes. Season with salt and pepper. Arrange scallops over the leeks and garnish with pink peppercorns. Serve as desired, even on porcelain spoons.
